We Chose 3
the holy trinity ~ refined
In the coming years, three wines will be born in the quiet folds of the Cape, each carrying a story that begins long before the first grape is crushed.
The first will be called Windbreak. Its vines will grow on a narrow ridge where the southeaster blows hard and without apology. The grapes will ripen slowly, toughened by salt air from the ocean and cooled by evening fog. When the wine is finally poured, it will taste of restraint and patience—dark berries held in check by a firm spine, with a whisper of wild herbs. Windbreak will be made for those who understand that strength doesn’t shout; it endures.
The second wine will be known as Stone Memory. Its vineyard will be planted in soil scattered with ancient granite, stones older than any map or language. The roots will push deep, learning the shape of the earth year after year. This wine will be layered and contemplative, unfolding slowly in the glass: plum, graphite, a trace of smoke. Stone Memory will reward silence and long conversations, reminding drinkers that time leaves fingerprints on everything it touches.

The third will be a lighter, more elusive creation called First Light. Harvested just before dawn, its grapes will be cool with night air and alive with tension. The wine will shimmer with citrus, white peach, and a faint floral lift, as if morning itself had been caught in liquid form. First Light will be shared at beginnings—new ventures, reconciliations, promises made before the day grows heavy.
Together, these three wines will form a quiet trilogy of the future: one shaped by wind, one by earth, and one by time itself. Each bottle will tell its own story, but all will speak of a place where nature, patience, and intention meet—and where the future is already fermenting. 🍷 { placed as a premium quality blend }
